Join Amagansett Food Institute, Haskell’s Seafood, and Peconic Baykeeper for an immersive introduction to seafood on Long Island and its sustainability, sourcing, and preparation. Led by those with an abiding commitment to supporting our local food heritage and promoting the health of our waters, this workshop is a deep dive into the bounty of Long Island. Each session will feature a local seafood recipe prepared by Captain Peter Haskell, an experienced fisherman whose business model is centered around sustainability and seasonality. While we enjoy our meal we will also learn about how we can become more involved in supporting local seafood and the waters it depends on while discovering delicious and local seafood cuisine. Sean O’Neill, the Executive Director of Peconic Baykeeper, will tell the story of our local waters and how our sustainable commercial fisheries are vital to the health of our local ecosystem and vice versa, while Baykeeper Peter Topping brings his knowledge of fish habitat and a lifetime on our local waters to illustrate the importance of our precious natural resources. Part 3: Seasonality of Seafood Eating seasonally is a creative challenge that can bring us into a more engaged dialogue with the environment we inhabit, and seafood is no different. Our local waters shift in temperature throughout the year, and fish migrations fluctuate. In this session we will discuss the role that seasonality plays in the local seafood market, and what preservation methods can be employed to optimize the availability of local seafood year round. We will illustrate this by telling the tale of the early spring Peconic Bay porgy run, showcasing why these fish are here now, and the methods of harvesting this often overlooked local culinary standout species!
