Dining Out At Fierro’s Pizza

Tradition means something to Fierro’s Pizza owner Claude Cardin, who bought the 26-year-old East Hampton standby five years ago and has kept much of the menu the same as it has been for nearly three decades. But along the way, Mr. Cardin has added a few new favorites to the once all-pizza menu as well: namely dinner entrées, specialty pizzas and a few healthier choices, such as whole wheat veggie pizza and minestrone soup.

Last week, Dining Out visited the restaurant to find out the most popular dish, the chef’s favorite and signature items.

The crowds come to Fierro’s at all hours for the pizza, but there are also those who come to get a steaming hot, homemade dinner for a reasonable price, Mr. Cardin said, adding that his restaurant was “strictly pizza until four years ago.”

The most popular dinner entrée is the Seafood Alla Fierro, which contains clams, mussels, shrimp, calamari, marinara and a choice of pasta. The dish, which was created by chef Santos Interiano, is a hearty seafood and pasta meal at a good price, according to the owner. Mr. Cardin said that he supposed the dish is so popular because it’s such a good bang for the buck.

His favorite dish on the menu is the Tortellini Alla Vodka with Shrimp, though he doesn’t enjoy it now as often as he once did. The pasta dish, made with cheese tortellini, shrimp, cream, and a homemade Parmesan cheese sauce, is rich and decadent.

“I used to eat it once a week but I’ve cut back because of the scale,” he joked. “The flavor, ah, it just tastes good.”

Pizza is, of course, the signature dish at Fierro’s. Diners can get a slice or two, or order a whole pie to eat-in, dine out or for delivery for lunch or dinner.

Mr. Cardin determined that about 70 percent of his customers come in for the pizza—a recipe his former boss, Mr. Fierro, “got from an old Italian guy in Brooklyn.”

“The pizza speaks for itself,” he added.

Slices come with a choice of 24 toppings, including: mushrooms, spinach, onions, pineapple, green peppers, roasted red peppers, black olives, pepperoni, sausage, ricotta cheese, extra mozzarella cheese, meatball, chicken, artichokes, tomatoes, ham, bacon, broccoli, anchovies, sun-dried tomatoes, feta cheese, eggplant, garlic, jalapeño, pesto and pineapple. By the pie, there are 10 specialty pizzas, including Margherita, Meat Lovers, Hawaiian, Chicken Bacon Ranch, Vegetarian, White Pizza, Buffalo Chicken, BBQ Chicken, Chicken Parmigiana and Stuffed Pizza.

Fierro’s Pizza is located on Park Place in East Hampton and is open for lunch and dinner seven days a week. The restaurant is open year-round, though closed on Easter, Thanksgiving and Christmas days. Late nights are Fridays and Saturdays, when Fierro’s serves until 10 p.m.
