‘Turning Back Thyme: A Taste of Hallockville’
Hallockville Museum Farm is offering a series of workshops that explore food production, preparation and preservation techniques from a time when farm-to-table was a necessity for Long Islanders, rather than a trend.
The workshop series, entitled “Turning Back Thyme: A Taste of Hallockville,” will take participants on a historic food journey in the setting of the preserved 18th century farm homestead at Hallockville Museum Farm, in Riverhead. The workshops began February 26 and will be held on selected Saturdays through June 11, and engage participants in local and seasonal food cultivation, cooking and preservation practices that were a way of life for Long Islanders decades ago.
“Farm-to-table may be trendy, but it’s not new,” said Roberta Shoten, Hallockville Museum Farm executive director. “With these workshops we’ll show how past farm-to-table practices can lead to a more environmentally conscious and mindful way of living today. We will literally present food for thought.”
In addition to offering hands-on food experiences, participants in “Turning Back Thyme: A Taste of Hallockville” will discuss how historic food practices are relevant today and share insights from books on a recommended reading list that accompanies the workshops.
The schedule and program content for the workshops are as follows:
Saturday, March 12 — Ethnic & Vegetarian Food Preparation
Historian, community gardener and home cook Susan Babkes presents the customs and flavors of North Fork immigrant groups. Participants will prepare traditional Irish and Eastern European dishes. Recommended reading: “Diet for a Small Planet” by Francis Moore Lappe.
Saturday, March 26 – Long Island Farming
An exploration of where our food comes from, the history of Long Island agriculture, the evolution of local farming, and a hands-on home garden project. Presented by Hallockville Program Director, Herb Strobel. Recommended reading: “Food Politics: How the Food Industry Influences Nutrition and Health” by Marion Nestle.
Saturday, June 11 – Food Preservation
Local cooks and educators lead an exploration of old and new food preservation and storage techniques with a hands-on canning class to make a seasonal preserve.
All workshops will be held at Hallockville Museum Farm, 6038 Sound Ave., Riverhead, from 10 a.m. to 1 p.m. The registration fee for a single workshop is $65 ($50 for Hallockville Museum Farm members). Learn more at hallockville.org. Registered participants may request complimentary copies of the books on the recommended reading list which have been donated to Hallockville Museum Farm by Humanities NY.
