Pierre Weber, the owner of Pierre’s restaurant and market in Bridgehampton, will soon open a market in Sagaponack at the site long known as the Sagg General Store.
Mr. Weber explained Wednesday that the owners of the building at 542 Sagg Main Street—which is shared with the Sagaponack post office—were running the general store themselves seasonally for years. He plans to rename the business Pierre’s, and aims to keep it open seven days a week year-round—the customers will dictate the schedule, he said. His plans follow the same formula he has exercised in Bridgehampton for 14 years. He said he wants to provide service to “the local people—not just the weekend people.”
It will continue to be a kind of general store, but there will be more food choices, he added.
Mr. Weber took over the storefront from Richard and Karen Thayer on March 1 and set about renovating the space. The spirit of the Sagg General Store will still be there, he assured, but he is bringing in new equipment and making improvements. “I had to do some changes that are more to my taste,” he said.
