Evan Addario Is Publick House's New Brewmaster

Twenty-nine-year-old Evan Addario climbed onto the metal platform inside the Southampton Publick House’s vat room last week to stir malted barley. With a little bit of elbow grease, the fermenting barley swirled around as he pushed the long-handled stirrer.

As the new brewmaster at the Publick House, Mr. Addario is responsible for overseeing day-to-day brewing responsibilities as well as changing and adding to the Publick House’s beer recipes. He also frequents Greenpoint Beer Works in Brooklyn and Olde Saratoga Brewing Company in Saratoga Springs, where Southampton Publick House beer is also brewed and packaged.

Just one week shy of turning 30, Mr. Addario said hadn’t been expecting to become brewmaster at the local small brewery, at least not so quickly.

“It kind of fell into my lap, and I wasn’t able to say ‘no,’” he quipped.

In March, Phil Markowski who had been brewmaster at the Publick House for 15 years, took a similar position at Two Roads Brewing Company in Connecticut, which is set to open later this year. Mr. Addario, who had been the assistant brewer for seven years, and Publick House owner Donald Sullivan agree that Mr. Addario’s transition to brewmaster has been a smooth one. For the last couple of years, Mr. Addario has been the “de facto head brewer,” Mr. Sullivan said.

“Evan has been, in reality, the brewer here while we expanded our off-site brewing,” Mr. Sullivan added. While Mr. Addario’s responsibilities haven’t changed drastically with the title change, Mr. Sullivan said that Mr. Addario now has the “latitude to tweak recipes in ways he thinks are appropriate.”

“For the last four years, I’ve done most of the brews myself,” Mr. Addario said. “Phil was primarily responsible for changing the recipes, and I would implement them and make the beer taste delicious.”

Mr. Sullivan said that learning the fundamentals of brewing under Mr. Markowski was the most important part of Mr. Addario’s training.

“Phil was an engineer by trade, in terms of brewing,” he said. “Evan can use his palate to tweak the beers. If you have those core understandings, you’re always ahead of the game.”

In 15 years at the Publick House, Mr. Markowski’s recipes earned him more than 25 awards, including five gold medals at the Great American Beer Festival, one of the industry’s more competitive and prestigious events.

The Publick House has five year-round beers, two to three seasonal beers, and four bottled specialty beers available on any given day in its bar and restaurant, and also sells its bottled product nationally. The microbrewery on Bowden Square in Southampton Village is located on a site where beer has been created and served since the 1800s; before Mr. Sullivan opened the Publick House brewery, tavern and restaurant in 1996, the site served variously as a speakeasy, tavern and restaurant.

With big shoes to fill, Mr. Addario looks at his challenge realistically. “It’s definitely intimidating,” he said about taking Mr. Markowski’s place. “I just want to keep the reputation of the Publick House the way it is.”

Mr. Sullivan said he has no doubt that Mr. Addario can take the reins and be successful in his new position. In addition to his training under Mr. Markowski, Mr. Addario brings his youthful perspective to the new job.

“I’m excited about the change,” Mr. Sullivan said, adding that Chris Ghiorzi has replaced Mr. Addario as assistant brewer. “The craft beer movement is accelerating, and a lot of young brewers in the industry tend to experiment more with beers. A younger brewer has a different perspective than a guy who started 20 years ago. Evan’s energy and different generational perspective allows him to take our beer in a bit of a different direction.”

Raised in Queens and Southampton, Mr. Addario attended the University of Colorado, where he first formed his passion for craft beer. After spending six years in Colorado, Mr. Addario found his way back to Southampton and joined the Publick House as assistant brewer, at first responsible for fixing brewing machinery.

“When something broke, it was easy enough to fix it without having to send it out,” he said. “Phil taught me the art of brewing. It’s done with a lot of care … we have a passion for what we do.”
