Tomatoes, peppers and chorizo (sausage) characterize this stew, which hails from Aragon in northeastern Spain. This is also delicious made with Serrano ham or lamb.
INGREDIENTS
• 2 tablespoons Olive oil
• 1 whole free-range chicken, cut into 2 wings, 2 breasts, 2 legs, 2 thighs (ask your butcher to do this for you)
• 4 chorizo or sausages (9 oz)
• 2 onions
• 4 cloves of garlic
• 4 ripe tomatoes
• 2-3 red, yellow or orange peppers
• One small jar of Spanish olives
• 1/2 cup dry sherry or sherry wine
• 1-1.5 cups organic, low sodium chicken stock
