The revival of food preservation techniques in recent years has led to an interest in lacto-fermented pickles. Lacto-fermentation is the pickling of vegetables using ingredients as simple as salt and water – no fancy equipment or vinegars needed. The Peconic Land Trust’s Bridge Gardens Director Rick Bogusch and community gardener Justin Ruaysamran will lead you through the process of fermenting your own jar of vegetables using vegetables on hand in the garden!
