Barley Dunne, director of the Aquaculture & Habitat Management Department of East Hampton Town, will cover the gamut of oysters, clams, and bay scallops with some history, hatchery culture, oyster gardening, and more. Rumor has it he may bring some samples and teach shucking techniques.
