Chef Arie Pavlou’s Bistro Été
Hosts Delicious Book-Signing Event in Water Mill
Le Cordon Bleu-trained chef and restaurateur Arie Pavlou welcomes Sag Harbor cookbook author Stacy Dermont to his Bistro Été in Water Mill on Sunday, July 11. From 4-7pm patrons can enjoy a complimentary glass of rosé with the purchase of a copy of The Hamptons Kitchen (Norton).
Dinner reservations for this date will sell out in advance, so Dermont plans to return for an additional signing event at Bistro Été later in the year.
Chef Arie, an author himself, was an advisor on the book and is credited in it for creating “instant mead,” and for his work on adapting Dermont’s family recipe for rabbit. It’s a sticky-sweet, delicious slow-roasted curried rabbit, and super-simple to cook!
The Hamptons Kitchen was released during the height of the pandemic and quickly became the top-selling regional cookbook in the mid-Atlantic states. Featuring a foreward by world renowned food critic Gael Greene and original photos by Lassen, the book has also garnered critical acclaim. Chef Eric Ripert said, “Hillary Davis and Stacy Dermont capture the spirit of cooking and eating simply, seasonally, and locally in the Hamptons.” The book offers a guide to what’s-in-season-when and over 100 original recipes, plus it includes a host of suggested East End wine pairings.
“Été” is French for summer. Bistro Été, located at 760 Montauk Highway, in Water Mill, is understated French chic, and “coastal,” in every season. Chef Arie, Liz, and staff urge you to “live life deliciously!” Patrons may indulge in classic dishes such as escargot, or striped bass with champagne truffle sauce. Chef Arie’s menu also features mouthwatering vegan and vegetarian versions of many dishes—inspired by his wife Liz’s vegetarianism.
