Wölffer Estate’s New Beer Collaboration
Wölffer Estate has released a fresh and extremely limited beer collaboration with Brooklyn-based Threes Brewing. Called Original Copy, the new beer is a rosé style saison aged in Wölffer wine barrels with Wölffer Estate grapes. The total production is 14 barrels, which is approximately 196 cases.
Inspired by Wölffer’s iconic Summer in a Bottle Rosé, Original Copy is a beer that mirrors the character of this wine. Crafted from a saison base, the beer has a soft, pink hue and was infused with grapes, aged in Wölffer’s freshly emptied red wine barrels and allowed to mature over several months.
“We like to think that as far as beer goes, this one has a particular elegance and refinement, paying homage to the crisp and refreshing characteristics of the iconic rosé,” read the Original Copy tasting notes from Threes Brewing. “The beer itself started as a small and simple saison hopped with Nelson Sauvin malt hops that would lay down a neutral base beer in which the grapes, wine barrels, and house culture speak through. It spent about a month in the fermenter to allow the base beer to clean up and allow the yeast to drop out. From there, the batch was inoculated with our house culture, contributing a gentle acidity and fruity Brett character that developed over the course of a few months.
“We sent the beer into freshly emptied Wölffer red wine barrels with grapes and a stainless holding tank in which they would spend the next two to three months of their life maturing and conditioning. The split into oak and stainless steel allowed the components to develop at different rates and was then blended back together once the flavors matured and developed into what we were looking for.
“On the packaging day, we primed the beer with a small dose of fresh yeast and sugar to allow for can and keg conditioning, which always helps tremendously with increasing carbonation levels, decreasing oxidation in package, and prolonging shelf life on a beer that we have spent so much time and effort creating. Overall, Original Copy presents with a soft pink hue, a delicate acidity and minerality, light tannic structure, and a delightfully refined and fruity aroma paralleling notes of a fine rosé.”
Original Copy is $17 for a 4-pack and available in the tasting room at Wölffer Estate Vineyard, 139 Sagg Road in Sagaponack. For details, visit wolffer.com.
