If there were a saloon at the Deep Hollow Ranch it might look like something out of an old Western. A cowboy walks through the swinging louvered panels, clomps his way to the bar in heavy cowboy boots, leans on the bar and says, “just gimme the bottle.”

That’s not quite the life of the Keoghs, who operate Deep Hollow Ranch, but their down-to-earth lifestyle includes a nice bourbon from time to time. With so much material to market their own, Cate Keogh started to look into distilleries. She found what she was looking for at the Utica-based Adirondack Distilling Company. After tasting a few samples of the company’s bourbons, they worked on perfecting a recipe that would become DHR1658 (from Deep Hollow Ranch and the year of its founding). The small batch, single oak barrel-aged bourbon has hints of banana, ginger, pepper and a hay finish, reminiscent of the ranch’s heritage.

The bourbon, aged 36 months, hit the shelves last year and it is sold at the farmers market in Montauk, as well as many liquor stores. Select restaurants will be doing tastings and pairings this summer.
