Haskell’s Hot Cajun Royal Red Shrimp Roll

10 oz. Haskell’s Montauk Royal Red Shrimp, peeled and deveined

1 Tbsp. olive oil

2 Tbsp. butter

2 tsp. Ashman House Blackening Spice

Optional pinches of cayenne pepper (for more spicy heat)

1/2 tsp. chopped fresh garlic

1 cup mesclun mixed greens

2 fresh baked Blue Duck Bakery buns

2 lemon wedges

Garnish – fresh chopped parsley

Slice and toast the bakery buns in a toaster oven and allow them to lightly brown. Then remove from the toaster.

Heat olive oil in a skillet on medium high heat. Add peeled and deveined Royal Red Shrimp to the hot pan, dust with blackening spice with optional cayenne pepper and sauté for two to three minutes turning the shrimp.

Add chopped garlic to the pan and turn throughout.

Finish cooking the shrimp by adding the butter and allowing it to melt by swirling the pan on and above the heat of the stovetop.

The total cooking process will take about 5 to 6 minutes.

Place several pieces of mixed greens inside the sliced bun.

With a spoon, scoop the warm shrimp from the pan and place inside the bun on top of the greens.

Garnish the Shrimp Roll with chopped fresh parsley and serve with a wedge of lemon.
