Montauk Salt Co., by owner and founder Sam Gelin of New York and the Hamptons, is the newest addition to the East End artisan salt companies, joining Amagansett Sea Salt Co. and Hamptons Salt Company. Montauk Salt is a finishing flake sea salt harvested from the waters off Ditch Plain Beach in Montauk. Rather than solar evaporation, Montauk Salt is separated from ocean water by boiling at a high temperature, a process the company says removes magnesium, calcium and other impurities.
