Another summer, another roster of new restaurants and places to dine where significant changes have been made. This week, Dining Out offers a partial list of what’s new for summer 2010.

Southampton

Wildthyme Restaurant at 129 Noyac Road is trying out a new approach this season in an effort to become “the first farm-to-table restaurant on the East End.” The concept means that ingredients are sourced locally and go directly from the farm to the table, which is part of a larger movement that encourages people to eat locally and take advantage of seasonal ingredients while focusing on the environmental and cultural impacts of farming. The menu will change daily with the availability of ingredients.

Wildthyme is open for dinner Sunday through Thursday from 5:30 p.m. to 9 p.m., and Friday and Saturday from 5:30 p.m. to 10 p.m. For reservations and information call 204-0007.

Bridgehampton

Southfork Kitchen at 203 Bridgehampton-Sag Harbor Turnpike is looking to local waters to dress up its summer menu. The restaurant will open in mid-July and serve locally caught entrées. The restaurant is the brainchild of owner Bruce Bushel, a resident of Bridgehampton for 30 years and an author and writer who has documented the experience of building and starting his first restaurant in his New York Times blog, “Start-up Chronicle.”
